Apricot Glazed Pork Skewers perfect for an outdoor dinner under the stars. Why have the same old grilled meat when you can bring dinner up a notch?

2-3 Pound pork roast cut into 1 ½ inch cubed*

1 Tablespoon Starwest Granulated Garlic

1 Tablespoon Starwest Granulated Onion

4 Ounces Apricot jam 

2 Ounces Water**

1 1/2 teaspoon Bff Kitchen parsley

1/2 teaspoon Bff Kitchen ground rosemary

6 Skewers

Best to prep the the pork skewers the night before, washing and removing as much of the outer fat from the pork roast. Cut into 1 ½ inch thick steaks, then slice into 1 ½ inch strips, proceed to cut the pieces into cubes, mindful to keep the meat in straight cuts.  Mix the granulated garlic and onion and sprinkle over the cubed pork.  Let rest overnight, if possible, in the refrigerator. You can do this step 45 – 60 minutes before cooking if need be.

Mix the apricot jam, water, ground rosemary, and parsley, skewer the pork onto the sticks, careful to have even distribution of meat, if possible, leave minimal space between the cubes and brush half on the apricot and water mixture, reserving the remaining for glazing the pork as it is cooking.  I prefer to BBq the skewers, I have done under a grill and broil them. I happen to like the smokey flavor of a BBQ; all is a preference.  Cook on each side for 3 minutes on each side or when the internal temperature reached at glaze every time you turn the skewers.

Wonderful with grilled watermelon and pineapple and a side of risotto or rice pilaf.

 *I personally have the butcher defat and cube the pork roast for me; they do not charge you extra and anything you can do to save time, do it.

** I have used peach schnapps in place of the water for more of an intense flavor; I usually do these for adults and water for people that do not like the taste of alcohol.
