Cucumber and tomato salad
2 English cucumbers or 3 cucumbers peeled and cored, then slice into a thick slices
3 Beefsteak tomatoes or 4 Roma tomatoes cut into ⅛ sections
½ Purple onion thinly sliced
¾ Cup olives
1 Cup feta cheese
¼ Cup Del Oliva Modena Balsamic vinegar
½ freshly squeezed lemon
½ Cup Del Oliva Olive Oil
¼ Cup of sliced fresh basil
1 teaspoon pepper
½ teaspoon salt
1 teaspoon Bff Kitchen Italian seasoning
Clean and prep the cucumbers slicing into thick diagonal cuts, cut the tomato into eighths, thinly slice the onion, and set aside in a large bowl.
Mix the oil, vinegar, salt, pepper, and Italian seasoning. Add the cucumber and tomatoes, Bunch the fresh basil, and cut into thin strips toss with the cucumber salad with the feta cheese. Refrigerate till serving
